"Despite their antioxidant capacity and associated health benefits, knowledge of the use of anthocyanins as an ingredient in food is very limited," adds the professor.
Studies have shown that anthocyanin also helps prevent cardiovascular and neurological diseases and cancer, helps control obesity and diabetes, and can inhibit digestive enzymes and lower blood glucose levels.
The professor has already approached companies and is studying the exit of purple bread to the market.
