Black-eyed bean salad

Execution Method:
For the dressing:
- Put the zest and juice of the lemon in a blender.
- Add the olive oil, tahini, maple syrup, garlic, water, salt and pepper.
- Beat them for 3-4 minutes until the mixture is homogeneous and set aside.
For the salad:
- Finely chop the green onions.
- Cut the peppers and carrot into small cubes and put them in a bowl.
- Chop the parsley and add it to the bowl.
- Add the black-eyed peas and mix well with a wooden spoon.
- Pour the dressing into the bowl.
- Mix well, check the seasoning and serve.
