Easter cookies

This recipe for Easter cookies belongs to Akis Petretzikis. I tried it, loved it and you can too!

Components:

  • 300 gr. butter
  • 300 gr. granulated sugar
  • 1 tbsp vanilla extract
  • 2 eggs, medium
  • 120 gr. Orange juice
  • zest, from 2 oranges
  • 50 gr. cognac
  • 1 kg of wheat flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 50 gr. milk
  • 1 pinch of salt
  • cloves, for the eyes
  • 1 yolk, diluted in 2 tbsp. water

Execution Method:

  • Preheat the oven to 190The C in the air.
  • Put the butter, sugar, and vanilla in the mixer bowl and beat with the whisk at medium speed for 5 minutes until the mixture becomes fluffy.
  • Then, one by one, add the eggs, juice and zest from the orange, brandy and continue beating.
  • Put the flour, baking powder, soda in a bowl and mix with a spoon.
  • Put half of the solid ingredients in the mixer, the milk, the salt and continue to beat for 1-2 minutes.
  • Remove the bowl from the mixer, add the remaining solid ingredients and mix with a spoon until the ingredients are homogenized. Then knead with your hands until it becomes a dough.
  • The cookies we will make will be shaped like bunnies.
  • Cut a piece of 30 g. shape into a strip and roll like a snail. In this way we create the body from the bunnies.
  • Cut a piece of 15 g. shape it into a small strip and roll it into a fish shape. In this way we create the head from the bunnies. We put a clove to make the eye.
  • Cut a piece of 3 g. and shape it into a ball. In this way we create the tail from the bunnies.
  • We follow the same procedure for the whole dough.
  • Transfer the cookies to pan with parchment paper, brush with the egg diluted with water and bake for 15-20 minutes.
  • Let them cool and serve.
