Delicious and healthy herbal soup with only 257 calories!

Vegetable soup – Ingredients:
- 2 potatoes
- 2 carrots
- 1 small celery root
- 1 leek (and the green part)
- 6-7 cabbage leaves
- 4 celery stalks (leaves only)
- 1 pint. of tea whole canned tomatoes
- 1 dry onion
- 2 tbsp glutinous rice
- 4 tbsp olive oil
- juice of 1 lemon
- freshly ground pepper
Instructions:
Clean, wash all the vegetables and cut them into thick pieces. Wash the rice. Add 2 liters of water to a pot and once it boils, add all the vegetables (potatoes, carrots, celery root, leek, cabbage) and a little salt. Boil them on medium heat and, when they soften, add the rice. Continue boiling for 15 minutes. Remove the pot from the heat and puree the mixture with the blender. Pour the pureed vegetables back into the pot, add the olive oil, pepper and lemon juice, and cook for another 5-10 minutes. If the soup is too thick, add a little hot water.
Nutritional value per serving: 257 calories, 11.5 grams. fat, 23 grams carbohydrates, 5.25 gm. proteins, 3 grams fiber.
