Egg Yolk: Which of the three looks healthier to you?
Time to learn to tell the difference eggs!
The color that has yolk one egg can reveal a lot about the health of the hen it comes from and its diet. If you saw these 3 yolks in the photo, which one would you say is healthier?
Most eggs you can find in supermarkets have a yolk with a light, pale, yellow color. This color reveals that the hen that did it is NOT being fed properly.
Such, in the photo, is the #2 yolk.
Conversely, the thicker, darker, orange the yolk is, the healthier the egg is. Such is the #1 yolk in the photo.
The white makes up 67% of the egg's weight and contains more than half of the total protein. Over time, the protein changes form and the egg white dilutes. That's why fresh eggs have a more cohesive texture, while the white of more "stale" eggs tends to spread more.
Yolk color has been shown to depend primarily on the hen's diet. Hens fed primarily on corn produce yellow-orange eggs, while those fed wheat or barley produce eggs with a less intense yellow color.
The color of the yolk is stable and does not change with cooking. So always keep in mind that an egg with a more orange yolk is definitely much healthier than the rest.
